Grandma Easson's Potato Salad Recipe

Aunt Maureen has been pestering (oops, politely asking ) me for the recipe I use for potato salad. I sent her this yesterday, but didn't include CyberLarkins.

I have to tell you I learned to cook from my grandma Easson who didn't know anything about recipes. (As you can see, Michelle has absolutely no competition from me in the cooking arena.)

A short aside. grandma Easson was a professional dressmaker and didn't know anything about patterns. Instead, she would look at a dress, look at a client and start cutting very expensive material, which by family lore scared the wits out of her husband.. Apparently she was pretty good.

Now, back to cooking. She was famous for saying when asked, "add enough" or "taste it" or a "handful.".

So, here is my recipe in her honor

  • Cook enough potatoes
  • Mix mayonnaise, cider vinegar, some juice from a pickle jar and lots of yellow mustard, salt and pepper
  • Mix into the potatoes while they are hot
  • Add cucumbers if you have them
  • Let sit in refrigerator for as long as Brian will let them
